John T. Pagel was widely recognized for his innovative and entrepreneurial spirit. Under his leadership, Pagel’s Ponderosa introduced forward-thinking practices such as a nutrient recovery system, robotic technology, and a state-of-the-art flash cooling system.

John’s vision extended beyond the dairy. He dreamed of producing farm-fresh cheeses and meats to share with his family and the wider community. In 2014, that dream became reality when the Pagel family purchased Ron’s Wisconsin Cheese and launched the Ponderosa Farmstead product line. Their passion for “farm fresh” food continued to grow, leading to the opening of the Cannery Public Market in 2015—Green Bay’s first true farm-to-fork dining experience.

After John’s passing in 2018, and with the challenges brought on by the COVID-19 pandemic, the family made the difficult decision to close the Cannery’s doors in 2021. Even so, the Pagel family has remained dedicated to carrying forward John’s legacy of innovation. The addition of a Compressed Natural Gas Plant at the dairy is one example of their commitment to sustainability. Likewise, Dairy Dreams has advanced its own operations with Aqua Innovations’ nutrient recovery system—another step toward responsible, future-focused farming.
